Skillet Mac and Cheese

Classic, cheesy, delicious. Is there really much more to say about macaroni and cheese? Big flavor and a crispy cheesy top really make this macaroni and cheese one to try!

Recipe:

Ingredients:

1 lb macaroni

1 tbsp butter

4 oz Pancetta or Bacon

3 tbsp flour (or enough to make a roux)

3 cups milk

4 oz cream cheese

12 ounces cheddar (8 ounces for sauce and 4 ounces for topping)

4 ounces mozzarella

1 tbsp mustard powder

romano to taste

breadcrumbs for topping

Steps:

1. Cook macaroni as directed. Preheat oven to 500 degrees

2. Heat a cast iron pan over medium heat. Melt butter and add pancetta or bacon. Cook until crispy, remove from pan.

3. Stir in flour and make a roux. Cook until lightly browned.

4. Whisk in milk, lower heat to a simmer.

5. Add cream cheese and allow to melt. Whisk until smooth.

6. Add the cheeses and the mustard powder to the sauce, stir until incorporated.

7. Add the cooked macaroni, stir until it is all coated.

8. Add remaining cheddar, romano to taste and breadcrumbs.

9. Bake for 10 minutes, or until top has browned.

10. Allow to cool, serve, and enjoy!
